How To Make Vegetable Stock
Two carrots
1 large onion, cut into quarters
Bunch of parsley - stems
12 Shamir - stems
12 Thyme - stems
3 celery - chopped leaves or celery root, halved
1 bay leaf
1 leek - a whole (including the green part), coarsely chopped
2.5 liters of water
Black pepper
Coarse salt
Put all ingredients into a large pot. Bring to a boil. Reduce heat and simmer minimum one hour. Remove from heat. Cool slightly and strain the stock. throw the vegetables, and the stock itself refrigerate for a few hours.
