Red pepper soup recipe is simple and quick to prepare
Good the rainy weekend, I've brought you a quick soup recipe of red peppers and carrots.
There is nothing like hot soup to warm the heart and soul on a cool and rainy.

Ingredients:
Red pepper soup recipe
7-8 red peppers cut into large strips
3 carrots, diced
1 large onion, chopped
Salt and pepper to taste
2 tablespoons of chicken stock
Water to cover
Olive oil for frying
Garnish:
Yogurt
Some finely chopped green onion/chives
Olive oil
Preparation:
fry the onions in a pot until translucent. add the carrots and cook it together for  about 8 minutes.
Add the red peppers and continue frying it all for about 5 minutes more.
Add water to cover and bring to a boil.
Put the chicken stock, salt and pepper to taste and cook another 15 minutes .
With food pocessor stick we blend it all till we get   thick and smooth soup.
if it's too thick we add more water and bland it again.
Transfer the soup into bowls sprinkle yogurt and olive oil on top, serve with bread sticks.
